at present, you can not use NCL to plot curvilinear grids, or any grid that
is represented by a unique lat/lon per grid point.

the good news is that this capability is in the queue to be added. I spoke
with the NCL supervisor just last week to get an update on this item. They plan
to add another feature by the end of september, and then turn their attention
to curilinear grids.

i can not say when this functionality will be added since it is a complicated
issue.

as for plotting your vertical coordinates, you can read in your 4D variable
and if you have an array that represents your vertical coordinate, you can
use it to represent the y-axis. Below is an example for an ocean model that
uses depth as the y-axis.:
