Filling missing data

I want to fill in the missing values in a time x lat x lon dataset.
Less than 1% of the data are missing in fairly random places. I would
be fine bilinearly interpolating the missing points in space, but I
don't see a built-in function to do it. The closest functions I see
are area_hi2lores, which would require me to degrade the resolution,
or poisson_grid_fill.

How much different is poisson_grid_fill from bilinear interpolation?
If I understand correctly, the poisson should be better because it
takes into account the second derivative, but it seems like it would
be a little more complicated to document and explain.
