Thank you to Dave and Evelyn for your help and detailed responses, it is most appreciated.

I have found a utility that does exactly what I wanted and more.

ncview -> http://meteora.ucsd.edu/~pierce/ncview_home_page.html

NCL is brilliant for plotting beautiful graphics, but that is not what I am trying to do.
