The GrayWhiteGray colormap was not added to NCL until version 6.0.0.
You really need to update your version of NCL. However I will attach the text file for this colormap. You can use it either by copying it into the $NCARG_ROOT/lib/ncarg/colormaps directory or
by putting it into a location of your choosing and then setting the environment variable NCARG_COLORMAP_PATH according to the directions given in http://www.ncl.ucar.edu/Document/Graphics/create_color_table.shtml under the heading "Move file to appropriate directory".
