Time Series for a specific Latitude

Hello!

I was wondering what I would need to do in order to create a time series for
a specific latitude.

What I am trying to plot is, for example, temperature at 800 meters depth
for 30 degrees North latitude.

Would anyone have an idea or know how to produce this time series plot?
