How to define variable in NCL?

Helloo

     I have daily ncep ncar uwnd data from 01 jan 1982 to 31 dec 2005....I
want to take the particular data from the above data set. and has to make a
single file....For example I want to take 31jan1983, 2feb1985, 10jun 1989
like that... How it is possible in NCL?
