lonPivot and lonFlip can only be used on rectilinear grids.
Rectilinear grids are ones where the coordinate variables
are one dimensional: lat[*] and lon[*]

I addded comments to the documentation.

A curvilinear grid where grid points are specified
by two dimensional arrays: lat[*][*] and lon[*][*]

I think you will have to write custom code to reorder
the grids the way you want.
