Difficult to fully grasp your problem but these three resources may solve it.
Along with an issue I brought up on the list on March 20th this year.

res@mpMaxLonF = 300
res@mpMinLonF = 40
res@mpCenterLonF = (res@mpMaxLonF-res@mpMinLonF)/2 ; bug where the labels wont be correct otherwise

plot = gsn_csm_contour_map(wks, data, res)
