I think the answer to the 1st questions is that to have
true conservative remapping, the ESMF software requires
the *exact* vertex (corner) locations of each cell.
This is not available on Daymet files. NCL makes a guess
at what the vertex locations might be. Possibly, the
guesses were not exact.
