Do you mean syntax highlighting for (programming/scripting) languages,
or actually colouring the text ad hoc?

If the former, it's under Preferences -> Default Settings -> Syntax
Highlighting -> Recognition Patterns, and it requires some playing
around to get it working the way you want (what doesn't?).

If the latter - sorry, I've no idea and I've never seen it done. Have
you tried <http://www.nedit.org/documentation.php>?
