interpolate to grid

I have data randomly distributed vegetation data across North America
over land only. I want to contour that data (over land)
but first need to fit it to a regular grid. How can I interpolate
these land points to a grid over N America only?

10,320 points:

treecover(10320)
lat(10320)
lon(10320)
