Average over an irregular domain

Hi There,
    I was wondering if there is any easy way to calculate an average of
precipitation in ERA40 over China. As you know, the boundary of China map
is irregular. I just don't want include gridcells outside. Any suggestions
will be appreciated. Thanks,
