What do you mean by "for 30 degrees North latitude"? At what
longitude? Or, do you want an average across a range of longitudes,
in other words a zonal average?

What kind of data are you starting with? Gridded?

"Create a time series" -- You mean a line plot? See the example page
for "XY" plots:
